Chicken and Broccoli Stir-Fry Recipe

Ingredients Needed:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce(I used regular, you can use reduced sodium)
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Directions:

  1. In a small bowl, whisk together the soy sauce, honey, cornstarch, and ¼ cup of water to make a sauce.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes or until cooked through.
  3. Add the broccoli and garlic to the skillet and cook for an additional 3-4 minutes or until the broccoli is tender.
  4. Pour the sauce over the chicken and broccoli and toss to coat. Cook for an additional 1-2 minutes or until the sauce has thickened.
  5. OPTIONAL: Serve hot with brown rice or quinoa.
